Recipe for Pork Casserole served with Black Eyed Peas & Basmati White Rice - Created By: Miss. Sukie O. Clarke
 

Linking with National Nutrition Month which takes place in March each year, we'd like to share a recipe from Islington resident Sukie Clarke.  

"To the best of my knowledge and ability, have given you an accurate and honest Family Recipe which I would label West Indian Flavour. (Not specific to any Particular West Indian Island) My Family are from Barbados and I was Married to a Jamaican Chef. My Cuisine incorporates flavours from Western Europe and India and West Indies."
 
Ingredients & Recipe for Black Eyed Peas and Basmati White Rice:
 
3ozs Dried Black Eyed Peas (SOAK Overnight before Cooking!)
Water (Mineral or Spring)
Sea Salt (0.02mg) pinch
1/2 oz Unsalted Butter
 
Method:
Black Eyed Peas cooked using Dried Pulses.
Dish can feed 3-4 people.
 
Soak 2 Mugs of dried peas overnight. Wash off all of the overnight water with cold water and place in desired cooking pan. ( 7") on average.  Fill the pan to half way mark and put to boil for 10 minutes, then turn down the temperature and simmer for a further 15 minutes, add the washed Basmati White Rice (brown if preferred) and 1/2 oz of Unsalted Butter for flavour and to avoid the rice sticking to the bottom of the pan. When the rice and peas have come to a natural boil, turn down the temperature and cook for 12 minutes. 
Let stand 5 minutes before serving.
 
Ingredients for Pork Casserole:
 
2-3 Pork Loin Chops (Good Quality)
1 medium brown onion
2 pegs of Fresh Garlic (powdered if necessary)
1/2 medium Fresh Scotch Bonnet Red Pepper
Fine Sea Salt (Pinch) 0.02mg
Black Pepper (Dried) add to your taste
Dried Paprika powder
Dried Turmeric powder
Dried/ Fresh Corriander (remove from stalks)
Dried/ Fresh Cumin
Oregano Dried/ Fresh leaves
Dried Gravy Granules
Dried Garam Masala powder
Dried/ Fresh Thyme leaves(remove from stalks)
Rosemary Fresh if available
*Filippo Berio Sun Dried Tomato Pesto (1tsp) - My Secret Ingredient in my sauces & Gravies. Essential.
3oz Fine Red Wine (Not Red wine Vinegar)
Mixed Vegetables( Peas, Carrots & Sweet corn) is preferred
Method to Cook Pork Casserole
Wash Meat with Lemon or Vinegar to remove any impurities from packaging and handling.
Pat the Pork Loin Chops dry with a dry cotton Tea Towel or Paper Towel. 
When the Pork Loin Chop is clean and dried, cover it with all the dried ingredients (Spices) and place in 9" Casserole Dish/Pan and add 2& 1/2 Mugs of Mineral/Spring Water.( Important not to let the Casserole dry out. If oven is too high this will spoil the meal.)
 
Pre Heat Oven - 150 degrees Celsius for 5 - 7 mins.
 
When Oven is pre-heated, add all of the other ingredients to the Casserole Dish/Pan and place in the Centre of the Oven to Cook for 1 hour and 35 mins.
 
You can turn the Pork chops after 45 mins if you desire. I like my meat to cook on both sides.
 
When Casserole is cooked, let stand for 5 Mins before serving with Black Eyed Peas and Basmati White Rice.
